Recipe: Our famous Corn Fritters
Summer is fast approaching and with that comes a sudden love for everything fresh fruit, granola and a heaping of delicous yoghurt can do together. This proves to be so so true unless you have been lucky and smart enough to try some of our fabulous homemade corn fritters. Being a true fan favourite for many years we have decided it is well beyond time we shared the secrets behind this magicial dish with none other than our loyal friends and family. 
A very simplistic dish that can be mastered in a matter of minutes, leaving you with nothing but a watering mouth before you take your first, but definitely not last, mouthful of pure bliss. 

Corn Fritters
What’s in them
1 cup White Wings Self-Raising Flour
1 cup cream
2 eggs
2 corn off the cob (roasted for an hour)
or 420g drain canned corn kernels
1/4 cup finely chopped chives and parsely
olive oil, salt, pepper 
½ roma tomato slow roasted
¼ Avocado
2 rashes lean bacon
How to make them
1. Sift flour into a large bowl. Season with salt and pepper. Stir until well combined. Make a well in the centre.
2. Whisk cream and eggs in a jug. Add to flour mixture with corn kernels and chives. Using a large metal spoon, gently fold ingredients together until combined (don't overmix).
3. Preheat a lightly oiled non-stick fry pan. When it’s hot, pore or spoon a ladle of the egg/corn mixture into the fry pan. Cook for about 2 minutes or until bubbles appear on surface. Turn. Cook for a further 2 minutes or until fritters are firm to the touch. Keep warm in oven while cooking remaining fritters. Place onto plates.
4. Top with slow roasted tomato, bacon, avocado, parsley or any other herb or preferred green leaf. "buen apetito."!!!
